Ingredients
2 chicken breast, large
½ cup of flour
50 grams of unsalted butter
3 cloves of garlic, minced
1 cup of chicken stock
1 cup of cream
½ cup of parmesan cheese, grated
½ cup of sundried tomatoes, chopped
1 teaspoon of chilli flakes
1 teaspoon of dried oregano
½ teaspoon of thyme
500 grams of spiral pasta, optional
1 tablespoon of basil, fresh leaves
2 tablespoons of olive oil

black pepper
Instructions
- Begin by butterflying each chicken breast and separating.
- Season your chicken with salt and pepper, then dredge in flour.
- In a large frying pan, heat your olive oil and melt the butter on a medium heat.
- Once melting and starting to sizzle, swirl the pan to coat with oil and butter evenly.
- Remove chicken and transfer onto a side plate. Cover and set aside.
- Mince your garlic and add to the pan. Sauté the garlic for approx. 1-2 minutes.
- Add your chicken stock to the pan.
- Adjust the heat to medium-low, then slowly add the cream and the parmesan cheese to the skillet. Allow the sauce to simmer for a couple of minutes, then season with chilli flakes, thyme, and oregano.
- Once combined well and simmering, season with salt and pepper to your taste.
- Add your sundried tomatoes and stir well to coat. If serving with pasta, add your pasta to the pan and stir well.
- Lastly, add your chicken back in the sauce and let the sauce simmer and thicken for a few more minutes over the pasta.
- Garnish with chopped fresh basil leaves. Enjoy!
