Marry Me Chicken with Sundried Tomato Sauce

Ingredients

\2 chicken breast, large
\½ cup of flour
\50 grams of unsalted butter
\3 cloves of garlic, minced
\1 cup of chicken stock
\1 cup of cream
\½ cup of parmesan cheese, grated
\½ cup of sundried tomatoes, chopped
\1 teaspoon of chilli flakes
\1 teaspoon of dried oregano
\½ teaspoon of thyme
\500 grams of spiral pasta, optional
\1 tablespoon of basil, fresh leaves
\2 tablespoons of olive oil
\salt
\black pepper

Instructions

  1. Begin by butterflying each chicken breast and separating.
  2. Season your chicken with salt and pepper, then dredge in flour.
  3. In a large frying pan, heat your olive oil and melt the butter on a medium heat.
  4. Once melting and starting to sizzle, swirl the pan to coat with oil and butter evenly.
  5. Remove chicken and transfer onto a side plate. Cover and set aside.
  6. Mince your garlic and add to the pan. Sauté the garlic for approx. 1-2 minutes.
  7. Add your chicken stock to the pan.
  8. Adjust the heat to medium-low, then slowly add the cream and the parmesan cheese to the skillet. Allow the sauce to simmer for a couple of minutes, then season with chilli flakes, thyme, and oregano.
  9. Once combined well and simmering, season with salt and pepper to your taste.
  10. Add your sundried tomatoes and stir well to coat. If serving with pasta, add your pasta to the pan and stir well.
  11. Lastly, add your chicken back in the sauce and let the sauce simmer and thicken for a few more minutes over the pasta.
  12. Garnish with chopped fresh basil leaves. Enjoy!
