Description

You’ll be sure to win someone over with this Marry Me Chicken recipe, tender chicken breast in a creamy sundried tomato sauce.

Ingredients

  • 2 chicken breast, large
  • ½ cup of flour
  • 50 grams of unsalted butter
  • 3 cloves of garlic, minced
  • 1 cup of chicken stock
  • 1 cup of cream
  • ½ cup of parmesan cheese, grated
  • ½ cup of sundried tomatoes, chopped
  • 1 teaspoon of chilli flakes
  • 1 teaspoon of dried oregano
  • ½ teaspoon of thyme
  • 500 grams of spiral pasta, optional
  • 1 tablespoon of basil, fresh leaves
  • 2 tablespoons of olive oil
  • salt
  • black pepper

Equipment

Instructions

  • Begin by butterflying each chicken breast and separating.
  • Season your chicken with salt and pepper, then dredge in flour.
  • In a large frying pan, heat your olive oil and melt the butter on a medium heat.
  • Once melting and starting to sizzle, swirl the pan to coat with oil and butter evenly.
  • Remove chicken and transfer onto a side plate. Cover and set aside.
  • Mince your garlic and add to the pan. Sauté the garlic for approx. 1-2 minutes.
  • Add your chicken stock to the pan.
  • Adjust the heat to medium-low, then slowly add the cream and the parmesan cheese to the skillet. Allow the sauce to simmer for a couple of minutes, then season with chilli flakes, thyme, and oregano.
  • Once combined well and simmering, season with salt and pepper to your taste.
  • Add your sundried tomatoes and stir well to coat. If serving with pasta, add your pasta to the pan and stir well.
  • Lastly, add your chicken back in the sauce and let the sauce simmer and thicken for a few more minutes over the pasta.
  • Garnish with chopped fresh basil leaves. Enjoy!
