Spicy Buffalo Chicken Flatbread Pizzas with Ranch

Ingredients

Buffalo Chicken Flatbread Pizzas

\2 flatbreads
\2 cups of cooked shredded chicken
\1 cup of buffalo sauce, (recipe below) or store-bought
\¼ capsicum, sliced
\¼ red onion, sliced
\½ cup of mozarella, grated
\spring onion, sliced, to garnish
\ranch, (recipe below) or store-bought

Homemade Ranch

\⅓ cup of mayonnaise
\⅓ cup of sour cream
\¼ cup of buttermilk
\1 clove of garlic, crushed
\2 teaspoons of fresh dill, finely chopped (or 1 teaspoon dried dill)
\1 teaspoon of fresh chives, finely chopped (or ½ teaspoon dried chives)
\1 teaspoon of parsley, finely chopped (or ½ teaspoon dried parsley)
\½ teaspoon of onion powder
\1 tablespoon of lemon juice

Homemade Buffalo Sauce

\115 grams of butter, melted
\½ cup of hot sauce, see note below*
\1 tablespoon of honey
\1 teaspoon of garlic powder
\½ teaspoon of salt

Instructions

  1. Preheat your oven to 200ºC.
  2. If using the homemade buffalo sauce, add all ingredients and whisk in a small bowl until well combined. If you want to make it spicier, add a couple of pinches of cayenne pepper, tasting with each addition.
  3. In a medium bowl, combine the shredded chicken with ½ cup of buffalo sauce.
  4. Place the flatbreads on lined baking trays. Spread with the remaining half of the buffalo sauce and scatter a third of the grated cheese. Add the shredded chicken and scatter sliced capsicum, red onion and the remaining grated cheese.
  5. Bake for 8-10 minutes until the cheese is melted and the crust is golden brown.
  6. Meanwhile, make the homemade ranch (if using), by adding all of the ingredients to a small bowl. Season with salt and pepper and mix well.
  7. Drizzle with ranch and top with chopped spring onion to garnish. Eat while it’s hot!

Notes

*When making for children, or you would prefer a milder option, use pizza sauce or BBQ sauce on the base and drizzle with buffalo sauce at the end as desired. Store-bought buffalo wing sauce options include Culley’s, Morepork, Franks RedHot or Sweet Baby Ray's.

Note: Leftover ranch will last in the fridge for up to 2 weeks.
