Ingredients

\500 grams of chicken mince
\1½ teaspoons of garlic powder
\1 teaspoon of dried oregano
\1 teaspoon of smoked paprika
\1 teaspoon of ground cumin
\1 teaspoon of salt
\handful of parsley, finely diced (optional)
\1 cup of Greek yoghurt
\1 clove of garlic, diced
\½ teaspoon of dried dill
\salt, to season
\pepper, to season
\8 tortillas, medium size

To serve

\cucumber, chopped
\avocado, chopped
\tomatoes, chopped
\red onion, diced

Instructions

  1. Place the chicken mince in a bowl and sprinkle over the garlic powder, oregano, paprika, ground cumin, salt and fresh parsley, if using. Mix thoroughly until combined.
  2. Make the yoghurt sauce by mixing together the yoghurt, garlic and dried dill. Season generously with salt and pepper.
  3. Grab a tortilla and thinly spread about 3 tablespoons of the seasoned mince on one side.
  4. Place the shoestring fries in an air fryer or a preheated oven and cook until golden brown and crispy.
  5. Heat a dry pan over a medium-high heat. Place the tortilla meat-side up in the pan and cook until the tortilla is browned and the chicken mince looks about halfway cooked. Reduce the heat if the tortilla browns too fast. Flip and cook the meat-side down for another minute or two. Repeat until all the meat and tortillas are cooked.
  6. Top each cooked tortilla with a dollop of the yoghurt sauce, a generous sprinkling of the cucumber, red onion, tomato and avocado. Finish with a handful of crispy fries. Fold and enjoy immediately.
