
Pulled Chicken Pizza with Roast Red Capsicum
Everyone loves pizza and this BBQ pulled chicken pizza with the addition of roasted capsicum sauce is bound to become a household favourite.

Ingredients
500 grams of chicken thighs, boneless
2 pizza bases, thin
1 red capsicum
1 red onion
1 cup of cheese, grated
1 teaspoon of dried oregano, dried
1 teaspoon of chilli flakes
1 teaspoon of mixed herbs
1 bag of salad leaves
Pizza sauce
2 tablespoon of tomato paste
2 red capsicums, roasted
1 clove of garlic, peeled
½ onion
1 teaspoon of black pepper, freshly ground, to taste
1 pinch of salt
1 teaspoon of basil, dried
Instructions
- Marinade the chicken thighs with salt, pepper, mixed herbs and set aside.
- Heat a medium frying pan with olive oil and place each thigh in the pan to sear both sides. Turn the heat down and fry on a low heat until cooked through.
- While chicken is cooking make your pizza sauce. Add all ingredients to a blender and blend on high until well mixed.
- Slice red onion and capsicum and set aside in a separate bowl.
- Once chicken is cooked, remove from pan and leave to rest for 2 minutes. With 2 forks gently tear the meat creating pulled thighs and place into a bowl.
- Top pizza bases with sauce, chicken, onion, capsicum and season with salt, pepper, oregano and a sprinkle of chilli flakes.
- Place into oven and bake for 20 minutes, or until the crust is golden brown and the cheese has melted.
- Serve immediately with a side salad.
