Ingredients

\500 grams of chicken thighs, boneless
\2 pizza bases, thin
\1 red capsicum
\1 red onion
\1 cup of cheese, grated
\1 teaspoon of dried oregano, dried
\1 teaspoon of chilli flakes
\1 teaspoon of mixed herbs
\1 bag of salad leaves

Pizza sauce

\2 tablespoon of tomato paste
\2 red capsicums, roasted
\1 clove of garlic, peeled
\½ onion
\1 teaspoon of black pepper, freshly ground, to taste
\1 pinch of salt
\1 teaspoon of basil, dried

Instructions

  1. Marinade the chicken thighs with salt, pepper, mixed herbs and set aside.
  2. Heat a medium frying pan with olive oil and place each thigh in the pan to sear both sides. Turn the heat down and fry on a low heat until cooked through.
  3. While chicken is cooking make your pizza sauce. Add all ingredients to a blender and blend on high until well mixed.
  4. Slice red onion and capsicum and set aside in a separate bowl.
  5. Once chicken is cooked, remove from pan and leave to rest for 2 minutes. With 2 forks gently tear the meat creating pulled thighs and place into a bowl.
  6. Top pizza bases with sauce, chicken, onion, capsicum and season with salt, pepper, oregano and a sprinkle of chilli flakes.
  7. Place into oven and bake for 20 minutes, or until the crust is golden brown and the cheese has melted.
  8. Serve immediately with a side salad.
