Mexican Chicken Burgers

All the flavours of your favourite Mexican meal in burger form. These are a guaranteed crowd-pleaser.

Ingredients

Burger Patties

\600 grams of chicken mince
\½ red onion, finely diced
\1 teaspoon of garlic powder
\1 ½ teaspoons of ground cumin, ground
\1 teaspoon of smoked paprika
\½ teaspoon of salt
\1 egg, lightly whisked
\¾ cup of breadcrumbs

Guacamole

\2 avocados, ripe
\1 tablespoon of lemon juice, or lime juice
\1 clove of garlic, diced
\1 tomato, diced
\1 pinch of chilli flakes, dried, as desired
\salt, to season
\black pepper, to season

To serve

\4 brioche buns, toasted
\4 slices of cheese
\baby spinach
\jalapenos
\corn chips

Instructions

  1. Combine the chicken mince, red onion, garlic powder, spices, salt, egg and breadcrumbs. Mix well. Form the mixture into 4 burger patties.
  2. Cook patties in a pan over a medium heat until browned on both sides and cooked through.
  3. Mix together the avocado, garlic and lime juice. Mash well. Taste and season generously. Stir through the tomato.
  4. Toast the buns and melt a slice of cheese on each bottom half. Add the baby spinach and a patty. Spoon a big dollop of guacamole on top and a couple of jalapeno slices. Add a handful of corn chips to each plate and serve.
