Ingredients
2 chicken breast, diced into bite sized cubes
3 tablespoons of soy sauce
2 tablespoons of brown sugar
2 cloves of garlic, crushed
1 teaspoon of ginger, fresh, grated
jasmine rice
spring onions
sesame seeds
Instructions
- Add 1 tablespoon of soy sauce, 1 tablespoon of brown sugar, garlic and ginger into a bowl and mix to combine. Add the chicken, season with salt & pepper and toss to coat.
- Add a splash of oil to a large fry pan over medium-high heat. Fry the chicken on both sides for a minute until golden – don't worry about cooking it completely as it will finish cooking in the sauce.
- Add the remaining soy sauce and brown sugar to the pan and simmer for a few minutes, stirring until the sauce has reduced and thickened - this will take around 7 minutes. Serve immediately.
- Serve with: Steamed jasmine rice, sliced spring onions and sesame seeds.
