Cranberry and Five Spice Chicken Nibbles

Ingredients

\1.5 kg of chicken nibbles
\150 grams of cranberry sauce
\⅓ cup of water
\2 tablespoons of soy sauce
\3 cloves of garlic, finely diced
\2 teaspoons of ginger, fresh, finely grated
\1 teaspoon of Chinese five spice
\salt
\pepper
\oil, for roasting
\sesame seeds, to garnish (optional)
\ground coriander, fresh, to garnish (optional)

Instructions

  1. Preheat oven to 180°C.
  2. Pat the chicken nibbles dry. Toss with a good drizzle of oil and season with salt and pepper. Place on a large oven-proof tray. A larger tray will give the chicken enough space to brown. Bake for 30 minutes.
  3. Place the cranberry sauce, water, soy sauce, garlic, ginger and five spice into a small saucepan. Bring to a boil and then simmer until the sauce is glossy and reduced by half.
  4. Remove the chicken nibbles from the oven after 30 minutes and toss in the reduced cranberry sauce. Bake for another 10-15 minutes.
  5. Garnish with a sprinkle of sesame seeds and some fresh coriander.
