Ingredients
1 store-bought rotisserie chicken
¼ cup of peanut butter
2 tablespoons of oyster sauce
2 tablespoons of fish sauce
1 tablespoon of soy sauce
2 teaspoons of sesame oil
1 tablespoon of lemon juice, or lime juice
1 tablespoon of ginger, finely grated
1 teaspoon of garlic powder
generous pinch of chilli flakes
2 spring onions, thinly sliced
½ cup of boiling water
200 grams of dried egg noodles
200 grams of green beans, trimmed
crispy shallots, to garnish
Instructions
- Remove the chicken from the bag and pull the meat from the carcass in medium-sized chunks (don’t shred it too small). You’ll need just ¾ of the chicken for the recipe. The rest can be stored in the fridge for other meals. Keep the bag as you’ll use this for mixing everything.
- Whisk together the peanut butter, oyster sauce, soy sauce, sesame oil, lemon juice, ginger, garlic powder, chilli flakes, spring onions and boiling water.
- Bring a medium pot of water to a boil and cook the noodles for 1 minute less than the packet instructions. In the last minute of cooking add the green beans. Drain noodles and beans in a colander.
- Quickly add the noodles and beans to the bag the chicken came in. Add the chicken on top and then pour over the satay sauce. Toss together really well.
- Sprinkle with crunchy fried shallots and enjoy immediately.
