
Air Fryer Chicken Breasts with Feta and Chive Mash and Winter Greens

Ingredients
Chicken
600 grams of chicken breast
2 tablespoons of olive oil
1 teaspoon of smoked paprika
1 teaspoon of garlic powder
Feta and Chive Mash
1 kg of potatoes, peeled and cut into cubes
3 tablespoons of butter
⅓ cup of milk, plus more if needed
¼ cup of chives, chopped
120 grams of feta, crumbled
Winter Greens
1 bunch of silverbeet, or kale or spinach
olive oil, for sautéing

Instructions
- Place the potatoes in a large pot of boiling water.
- Reduce heat slightly to a rapid simmer and cook for 15 minutes until very soft.
- Drain in a colander and then return to the pot for mashing. Mash with the butter and milk until smooth. Add additional milk if needed and season well.
- Stir through the feta and chives.
- Cover to keep warm until serving.
- Place the chicken in a bowl. Drizzle with olive oil and sprinkle with garlic powder and paprika. Mix well to evenly coat the chicken.
- Place chicken in an air fryer and cook at 180 degrees for 16-20 minutes, depending on size of pieces, until cooked all the way through. A meat thermometer will read 70 degrees when ready.
- Wash and roughly chop the silverbeet.
- Heat a drizzle of olive oil in a sauté pan over a medium-high heat. Add the chopped silverbeet to cook, tossing regularly for 5 minutes until tender and glossy. Season with a little salt.
- Slice the chicken breasts and serve each person with a scoop of mashed potatoes and a helping of silverbeet or your chosen winter greens.
