Air Fryer Chicken Breasts with Feta and Chive Mash and Winter Greens

Ingredients

Chicken

\600 grams of chicken breast
\2 tablespoons of olive oil
\1 teaspoon of smoked paprika
\1 teaspoon of garlic powder

Feta and Chive Mash

\1 kg of potatoes, peeled and cut into cubes
\3 tablespoons of butter
\⅓ cup of milk, plus more if needed
\¼ cup of chives, chopped
\120 grams of feta, crumbled

Winter Greens

\1 bunch of silverbeet, or kale or spinach
\olive oil, for sautéing
\salt
\pepper

Instructions

  1. Place the potatoes in a large pot of boiling water.
  2. Reduce heat slightly to a rapid simmer and cook for 15 minutes until very soft.
  3. Drain in a colander and then return to the pot for mashing. Mash with the butter and milk until smooth. Add additional milk if needed and season well.
  4. Stir through the feta and chives.
  5. Cover to keep warm until serving.
  6. Place the chicken in a bowl. Drizzle with olive oil and sprinkle with garlic powder and paprika. Mix well to evenly coat the chicken.
  7. Place chicken in an air fryer and cook at 180 degrees for 16-20 minutes, depending on size of pieces, until cooked all the way through. A meat thermometer will read 70 degrees when ready.
  8. Wash and roughly chop the silverbeet.
  9. Heat a drizzle of olive oil in a sauté pan over a medium-high heat. Add the chopped silverbeet to cook, tossing regularly for 5 minutes until tender and glossy. Season with a little salt.
  10. Slice the chicken breasts and serve each person with a scoop of mashed potatoes and a helping of silverbeet or your chosen winter greens.
